Well the rest of January has been mostly days spent indoors watching the snow. We've been working hard on our schoolwork so we can finish early again this year. I've been working on my many projects and trying to make some gifts for upcoming sprng birthdays. I finally finished my felted laptop cover and I am very pleased with the results.
We also made some Mozzerella Cheese with the cheese kit Kevin's parents gave me for my birthday. The kids thought that was great. This is me stretching the curds to make a nice smooth cheese. It came out great! I made some fresh ricotta too and it all made a delicious lasagna! Next we are hoping to build a cheese press for some aged cheeses.
I am a stay at home, homeschooling mom to 3 crazy kids, and wife to a husband who puts up with us all. We have a 120 year old farmhouse we are sure will take just as long to renovate, a one acre garden and too many animals! I am trying to live a slower, simpler life without being dependant on material things, and teach my children to live in a manner that is pleasing to God. Our adventure is challenging but rewarding, and I wouldn't change it a bit.
